Blintzes
 

1 dozen frozen cheese blintzes

½ cup butter (1 stick)

4 Eggs

1½ cups sour cream (a bit less than is in a one pound container)

¼ cup sugar

1 teaspoon vanilla extract

 

Heat oven to 350ºF.

Melt butter (or margarine) in a 2 quart Pyrex baking pan.  Turn the frozen blintzes in the butter to coat them, then arrange them in a single layer in the pan.

Beat the eggs.  Add sour cream, sugar, and vanilla, beat some more.  Pour over blintzes.

Bake for about one hour, until golden brown.  Can be served with stewed fruit.

 
Daniel’s comments:
A super-easy very good recipe, was my standard dish for potluck dinners for years.  The recipe can easily be doubled and baked in a 4 quart dish.  You can also make it using fruit filled blintzes. For parties, we will make this ahead of time (everything except baking it), then freeze it (putting the whole Pyrex dish in the freezer).  Dish can go straight from the freezer into the oven, but count on doubling the baking time.
